- white granulated sugar - 115 g;
- cane sugar - 65 g;
- butter - 115 g;
- cream - 240 ml;
- corn syrup - 115 ml.
Preparation
Put a pan with a thick bottom on the fire and put both kinds of sugar in it. Add butter cubes, pour in cream and corn syrup. While stirring, wait for the boiling of homemade caramel, and then, if you have a special culinary thermometer at your disposal, lower it into a pan and wait until the temperature of the caramel mixture reaches 117 degrees. If there is no thermometer, then the caramel readiness test the breakdown on a solid ball, within which a drop of caramel drips into a container of cold water: if the caramel forms a round and elastic ball, it is ready.

Add to the sugar caramel cubes of butter, then pour in the cream, add the instant coffee and a pinch of salt. Return the caramel to the fire and cook, stirring, waiting until it changes color to a darker one. Pour the caramel into the parchment-covered form and leave it in the cold for half an hour.
