Calzone (other names panzerotto and panzarotto, ital.) Is a kind of Italian crescent shaped cake, in fact, is a closed form of pizza. Closed pizza calzone looks like a cheburek. This form provides juiciness and preserves all the flavors of the filling, it is very convenient to take such a dish with you on a picnic or on the road. "Calzone" is literally translated as "pants", small calzones are called "calzonchelli" ("panties"). This is one of the most popular traditional dishes in the central and southern regions of Italy. Usually, the calzone is served as a classic snack, and sometimes in the form of a dessert, if the filling is sweet.
Cooking dough
Dough for calzone is used the same as for cooking open pizza.
Ingredients:
- 2.5 cups of high-grade wheat flour + 0.5 cup;
- 1 glass of warm water (45-50 ° C);
- 1 pack of yeast (dry);
- 0.5 teaspoon of honey or sugar;
- 0.5 teaspoon of salt, better than coarse grinding;
- 1 teaspoon of olive oil.
Preparation:
In a large bowl, oiled, dissolve in warm water half a spoonful of honey and dilute the yeast. Thoroughly mix and let the distance of 10 minutes in a warm place. Season with salt and extra virgin olive oil. Mix again and start to add a little flour, carefully mixing. By the end of the kneading process, we work exclusively with our hands, having previously oiled them. We roll the dough out of the dough, place it in a bowl, cover it with a clean towel and put it in a dry, warm place for 40 minutes. The dough for pizza is ready. From this amount of dough, you can prepare 1 large or 2 medium calzone (or 4 small calconocelli). You can cook and a dough. It should be noted that the classic Italian dough for pizza does not prevent the preservation of the figure, in contrast to the more satisfying options.
What is the preparation for the calzone?
The filling for the calzone can be very different, but the classic variant must necessarily include cheese (best Italian) and tomatoes (in any form, of course, it is better fresh, but not watery). You can make a calzone with chicken or, for example, a calzone with minced meat and mushrooms. In general, the options can be very diverse, you can use different types of meat, vegetables and seafood.
Calzone recipe: preparation

Ingredients for filling:
- gram 200 ham;
- gram 300 hard cheese + 100 grams of soft cheese;
- 2-4 chicken eggs;
- 5 tablespoons of grated tomatoes;
- greens (basil and marjoram);
- a little olive oil;
- ground pepper: black and red.
Preparation:
