It's time to put an end to the myths about the excessive use of vegetable fats and the need to reduce the fat content in food. Low-calorie diet for many years was (and now remains) popular as a way to lose weight and prevent illnesses - or at least keep them under control. Engineers-technologists in food companies were knocked off their feet, producing products "with low fat content" or completely skim. As a rule, because of this, the products lost taste and changed the texture. Then it was necessary to increase the amount of salt, sugar, refined grains.

Modern scientific studies show that the total amount of fat in the diet is not really related to weight or disease. The whole point is in the type of this fat and in the total number of calories in the diet.

"Bad", that is, trans fats and saturated fats, increase the risk of developing a number of diseases. "Good" fats, that is, monounsaturated and polyunsaturated fats, give the opposite effect. They are good for the heart and other organs. Nutritionists of the last century did not think about what can be dangerous vegetable fats. A high content of Omega-6 accelerates the inflammatory processes in the body and is directly related to the development of cardiovascular diseases, diabetes, obesity, asthma, cancer, autoimmune diseases, hypertension, infertility, blood clots; this is the harmful use of vegetable fats.

With proper application, vegetable fats can become an excellent natural remedy. They contain phenolic compounds - substances that have antioxidant, anti-inflammatory and anticoagulant properties, which are believed by scientists to increase the metabolic rate in the body.

The most important functions of vegetable fats in our body: the restoration of strong full-fledged cell membranes, transportation and oxidation of cholesterol. In addition, the body uses substances, of which vegetable fats are composed as precursors of tiny but powerful hormones known as eicosanoids (prostaglandins, leukotrienes and thromboxanes) that participate in the work of virtually all body systems.

Modern nutritionists advise not to treat products categorically. It all depends on the dosage and the combination of substances that we use. Now in laboratories around the world there are studies that study in more detail both the benefits and harm of vegetable fats. And we should combine all the products available to us in a reasonably well-designed diet.
