Prepare the original tartlets according to the above recipe. While they are baked and cool, prepare the filling. For this we boil to the full readiness, rinse in icy water and clean the eggs, separate the proteins and grind them on a grater. Add the melted cream cheese, finely chopped fresh greens of dill, mayonnaise to taste and mix. Fill the resulting mass of tartlets, top spread one layer of red caviar, decorate with a sprig of dill and place on a dish decorated with lettuce leaves.

We cook homemade tartlets, using the recipe above, and make a mushroom filling. To do this, we clean and finely chop the onion and pass it in a frying pan with vegetable oil until it is transparent. Then add carefully washed and chopped small-sized mushrooms and let in medium heat under the lid until the softness and evaporation of the entire liquid. At the end of the frying season the mushroom frying with salt and ground black pepper.

In the cooled mushroom mass we add grated Parmesan, if desired, finely chopped fresh herbs and mix.

Fill the resulting mixture with ready-made tartlets, we rub out a little with grated cheese, decorate with fresh herbs, place on a platter and serve it to the festive table.

The basis for tartlets can also be made from cheese dough. Such tartlets are especially tasty with fish or meat fillers.

We pass through the grater cheese, mix it with soft butter, beaten egg and salt and mix well. Then we pour the sifted wheat flour, hastily mix it, form a ball from the dough and place it in the fridge, covering it with a film. Then we roll out the cooled dough to get a layer about two to three centimeters thick, cut out the molds of the tartlet, press them against the mold walls, pierce a little with a fork to avoid swelling, and send it to the oven heated to 210 degrees for ten minutes or until the straw color is obtained.
