Mushroom soups-puree - fragrant, nourishing and creamy. Cooking them is not so difficult, and even less expensive, especially if you use the most affordable and common mushrooms in the market - mushrooms.
Classic mushroom soup with champignons
Ingredients:
- Butter - 3 tbsp. spoons;
- onions - 1 pc .;
- champignons - 300 g;
- fresh thyme - 1 teaspoon;
- salt, pepper - to taste;
- flour - 1/4 of the item;
- chicken broth - 3 items;
- cream - 125 ml.
Preparation
In the saucepan, melt 1 tablespoon oil and fry on it chopped onion for 3 minutes. Mushrooms cut into plates and add to the frying pan to the onion together with thyme, salt, pepper and another spoon of oil.
Fry all together, stirring, until the mushrooms begin to acquire a golden hue. Add the last spoon of oil and cover the flour. Fry everything, stirring, for 30 seconds, after which we pour the chicken broth . Boil the sauce for 10 minutes.
Most of the mushrooms are extracted and whipped in a puree with a blender. Return the mashed potatoes to the soup, add the cream and serve it to the table. Cream of mushroom soup with mushrooms is good in combination with a slice of crispy white bread, rubbed with garlic and smeared with butter.
Dietary mushroom soup with mushrooms
Ingredients:
- cauliflower - 2 items;
- almond milk or low-fat cow's milk - 1 2/3;
- dried onions - 1 teaspoon;
- salt, pepper - to taste;
- olive oil - 1/2 tsp;
- champignons - 200 g;
- onions - 1 pc.
Preparation
In a small saucepan pour the milk and put in it the cauliflower inflorescence, pour salt, pepper and dried onions. After boiling, cook cabbage 7-8 minutes, until soft, and then pour without draining the liquid.
In the pan, we heat the oil and fry the sliced mushrooms with onions on it. After 7-8 minutes, add the mushroom sauce to the soup. Pre-fungi can be mashed, and can be left whole - if desired. Boil puree from cauliflower with mushrooms for 10 minutes, until the soup thickens, after which it can be poured on plates and served to the table.
Cheese cream soup with mushrooms
Ingredients:
- butter - 2 tbsp. spoons;
- onions - 1 pc .;
- champignons - 250 g;
- chicken broth - 500 ml;
- flour - 3 tbsp. spoons;
- milk - 2 items;
- grated hard cheese - 1 3/4;
- salt, pepper - to taste;
- thyme - 2 tbsp. spoons.
Preparation
Butter the butter in a frying pan and fry the onion on it for 5 minutes. Add the mushrooms, thyme, and continue cooking for another 5 minutes. Sprinkle mushrooms with flour, fry another minute and pour a mixture of broth and milk. Salt and pepper the contents of the frying pan, bring the liquid to a boil, and then reduce the heat and simmer the soup for 10 minutes.
After, the soup can be blended with a blender, then return to the fire and cover with grated hard cheese. Stir, cook the soup until the cheese melts. Creamy mushroom soup with champignons and cheese should be served to the table immediately after preparation.
Chicken cream soup with champignons
Ingredients:
- chicken fillet - 2 pieces;
- chicken broth - 4 items;
- Butter - 3 tbsp. spoons;
- leeks - 2 pieces;
- celery - 2 stems;
- champignons - 300 g;
- apple cider vinegar - 1/4 c .;
- Dried thyme - 1/2 tsp;
- cream - 1/2 tbsp .;
- salt, pepper - to taste.
Preparation
Prepare soup puree from champignons will not be difficult. Chicken fillet, pre-washed and dried, pour broth and put on fire. Boil the chicken until ready, about 15-20 minutes, not forgetting to remove the foam formed during the boiling.
In a separate saucepan, melt the butter over medium heat. Fry the leeks and celery slices to softness, about 10 minutes. Now add the pieces of champignons and cook them for another 2-3 minutes. Fill the contents of the pan with chicken broth, complement the soup with vinegar, thyme and cream. At this stage, vegetables can be mashed. Boil the soup for 20-30 minutes, and at the end of the preparation we supplement it with chunks of chicken.
