Like almost any dish of this kind, it can be eaten both hot and cold. In fact, if you have enough patience, then the caponata should stand up a little, so that the vegetables can soak in the sauce

Have you ever thrown dice? That's the size of a piece of eggplant. Let's cut it, and let the hour stand, sprinkled with large salt. Thus eggplants lose their bitterness.

Next, we will try to cut all the vegetables in the same way as the eggplant.

The next step is to fry the onions with celery. But cubes of celery before roasting need to be slightly boiled in salted water. No more than three minutes. They put it back on the sieve and dried it. Now you can fry.

Add nuts, capers and olives to fried onions and celery and leave for another 10 minutes on medium heat. Now comes the turn of tomatoes. With them, we always peel before cutting. We send tomatoes for another 15 minutes to all other vegetables.

We will focus on the most important component of the dish - aubergines. They have already lost their bitterness, and we are rinsing them off with salt, drying and roasting separately from other vegetables. Only after the eggplants are ready, we add them to a friendly family on the first pan. Now it's the spice line. Add sugar, vinegar. The signal of the caponite's readiness will be the disappearance of the vinegar smell.

The ready caponate, the recipe of which you will be asked by everyone who tries it, is adorned with a leaf of basil.
