Duck with potatoes

In the cold season in the continental climate, you often want a nourishing and nutritious meal, especially for people engaged in heavy physical labor (not all in the offices are sitting, in fact).

Duck meat, although rather fat, still contains a lot of nutrients, so it is suitable for preparing nutritious and nutritious dishes that give energy. In summer or in warmer days the duck is well prepared with quince , with apples , prunes, and in winter it is possible with potatoes - it will be satisfying and tasty. This dish is good for a family dinner on weekends. It is preferable to prepare musk ducks or mullards (hybrids with musk duck), the meat of these subspecies is more tender and less fatty. Of course, dishes made from meat of waterfowl should be eaten no more than 2 times a week.

Stewed duck with mushrooms and potatoes

The head, neck, back and tips of the wings, as well as offal from the carcass (this will go to the soup). Aromatic glands on the goose must be cut. The rest of the carcass will be cut into pieces (with bones), convenient for eating. We will marinate this meat with a mixture of lemon juice, a small amount of hot red pepper + 2 cloves of garlic (crushed). We marin at least for 3 hours, in order, in some way, to change the specific taste of duck meat. When the meat of the duck is mashed, we throw it back in a colander and rinse it, so that the taste of the dish is not sour. Then put it on a clean napkin.

In the cauldron, in oil, fry the onions to a golden hue, cut into quarter rings. Add the duck pieces and fry them all together until the meat color changes, then reduce the heat and stew until almost ready (about 1 hour), if necessary, adding water and stirring.

For 20 minutes before the readiness, we add the sliced ​​potatoes and mushrooms (not too small). Stew with spices. Before serving, lightly cool and season with chopped garlic and greens. This dish is good to serve a variety of vegetable raznosoly, as well as a glass of berry tincture.
