Cupcakes on sour cream

Cupcakes are a common type of sweet confectionery often - with raisins, nuts, fruits or jam. Usually cupcakes are baked from yeast or sponge cake and are traditionally served at the festive table. Cupcakes can be rectangular or circular (sometimes with a through hole in the center).

Recipes for muffins in different countries vary due to the difference in local ingredients and national-regional culinary traditions, which, of course, is very interesting. In the post-Soviet space, various dairy products are often used for preparing cupcakes: kefir, sour cream and others.

Preparing cupcakes with sour cream is a simple process, you will not need much time.

Let's steam raisin with boiling water, then salt the water after 10 minutes. Razotrem the eggs with the addition of sugar and slightly vzobem. Add sour cream, soda, vanilla, cognac and melted butter. Mix everything and begin to gradually sift the flour. You can knead the dough with a mixer at low speed (it should not be too thick in consistency). At this stage, we add steamed raisins to the dough. You can also add pieces of chocolate, candied fruit, fresh fruit and / or a little fruit juice, syrup.

Fill the dough with oil-lubricated molds for 2/3 of the height (silicone is very convenient). Well muffins are baked in medium-sized forms. Bake the muffins in the oven at a temperature of about 200 degrees C for 30-40 minutes. About the readiness of baking informs a ruddy crust and an appetizing smell. You can also puncture a cupcake with raisins in the middle of a match, if it remains dry, then the cupcake is ready. Carefully remove the prepared cupcakes from the molds (if they are not silicone, then first put the bottom on a wet towel, then turn it over). Hot cupcakes are sprinkled with powdered sugar. You can pour them icing or cream. We are waiting for 15 minutes and cut.

Cupcake with cottage cheese and sour cream

Dried apricots, we will wash and steam with boiling water for 15 minutes.

Sugar is mixed with cocoa and eggs and is consumed. The melted butter is mixed with sour cream and cottage cheese, wiped through a sieve (this is mandatory). Mix it all together and add rum, vanilla and soda. Sift flour and knead is not too thick dough. Carefully we will mix it with a mixer and add the dried apricots cut into small pieces, and the chocolate, grated on a large grater or chopped with a knife (we do not use all the tiles). Fill the oiled forms with 2/3 and bake the muffins in the oven for 30-40 minutes at an average temperature. We extract the ready-made pastries from the forms (see the previous recipe, above). Sprinkle the hot cupcakes with grated chocolate and wait 15-20 minutes. The taste of this dessert is very refined and strict, they are not cloying, which is remarkable for those who do not like too sweet desserts.

Any cupcakes can be served warm or cold with tea, coffee , hot chocolate, rooibos, mate or hot compote.
