Cooking pies - secrets and fillings

Cocktail pies - a dish invented by the people, received its name thanks to a liquid, creamy, dough that pours out on top or connects with the filling. The filling for this type of baking can be the most varied: salted, sweet, vegetable, fish, meat or fruit - it will be equally delicious.

In general, you can identify the four main secrets of cooking dough and fillings for jellied pies:

  1. Do not knead the dough for too long, otherwise it will become too dense after baking.
  2. Do not use juicy vegetables and fruits as a filling, otherwise the cake will be baked unevenly.
  3. Be sure to sift the dry ingredients of the dough before adding to the liquids so that the cake comes out airy.
  4. Choose fatty dairy products, if you want to get a thick and oily crumb of pie.

Sweet peach pie filled with peaches

Pouring pies with a sweet filling are not less common than their salty counterparts. The most popular additive in this type of baking are berry jams or fresh fruits.

As a filling for our jelly pie on kefir, we decided to choose peaches. When you cut the flesh of the fruit into slices, grasp the kneading of the dough, for which it is sufficient simply to combine the remaining components together until a homogeneous mixture forms. Add the butter to the cake, pre-melting it. The main secret of preparing a good dough is its proper mixing, which should be continued exactly until all the components are joined together, if the dough is kneaded for too long, it will turn out solid after baking.

Spread the peaches on the bottom of the mold and fill it with a ready-made dough. Leave our filling cake with a sweet filling at 180 degrees for half an hour.

Whip all the ingredients for the dough together by pre-melting the butter. Add blueberries to the mixture, and then bake a treat for 35 minutes at 180 degrees.

The filling for our jellied pie in mayonnaise will be chopped cabbage, which is preliminarily doused with salt and greens. After laying the cabbage filling in the mold, fill it with a dough based on a mixture of the remaining ingredients. Bake for half an hour at 180 degrees.
