Chicken with eggplants

Gourmet, delicious and healthy dishes can be prepared using chicken and eggplant meat as the main products. Of course, we will need some other ingredients: young vegetables, fragrant greens and spices.

We will cook in a saucepan or a large frying pan with a high board.

First, prepare the eggplant - remove the poison from them. We will cut the eggplant into cubes or small cubes of medium size and fill it with cold water in a bowl. After 10-20 minutes, we will drain the water and wash it.

We'll do the chicken: we'll split it into parts. It is better to put the neck and back into the broth. We will have a breast (cut it into 2-4 parts), a whole leg (2-3 parts) and a thicker part of the wings.

We will warm up the butter or fat in the saucepan and fry the finely chopped onions. Add the parts of the chicken and fry all together on medium heat for about 5 minutes, turning over the spatula. We reduce the fire and cover it with a lid. Stew under the lid for another 15 minutes, if necessary, adding water or unglazed table light wine.

Add the prepared eggplant and potatoes (you can cut each potato into 4 parts). After 10 minutes, lay the sweet pepper, cut into short straws, finely chopped tomatoes and spices (if necessary, add more water). Stew for 10 minutes.

Slightly cool, serve, sprinkled with finely chopped garlic and greens, with fresh fresh cakes (it's good to use a mixture of coarse wheat flour and barley flour for flat cakes). To such a dish it is good to serve homemade light unglazed wine or a glass of fruit rakiya.

You can, in some way, modify this recipe and cook a chicken with eggplant, olives and young beans. In this case, lay the young beans immediately after frying the meat. And olives without pits - at the very end of the cooking process. Potatoes can be excluded or left - your business. Instead of potatoes, you can add broccoli , disassembled into kitties (add it 15 minutes before the readiness). Try to do without dill, better use rosemary.
