Vegetable soups are not only a source of protein and vitamins, they help to adjust the work of the stomach and intestines, especially after diseases. Well, and just eat soup, when you want to relax from heavier food - also wonderful.
Baltic soup
One of the simplest options - cheese soup on chicken broth. He does not even brew (you need a ready broth), so to cook this wonderful dish - a couple of trifles.
Ingredients:
- rye bread - 2 slices;
- garlic - 1 large slice;
- strong chicken broth - 1.5 cups;
- parsley, coriander or other greens if desired - 3-4 sprigs;
- cheese "Estonian" - 50 g.
Preparation
Bread cut into small pieces ("at a time") and lightly dried in an oven, crackers gently rub garlic and put into a soup bowl. Mine and finely cut the greens, cut the cheese finely or three on a grater. Also put in a bowl and fill it with boiling broth. As you can see, cheese soup on chicken broth is simple and tasty. And most importantly, the number of ingredients that you put in an individual plate can be changed as more like it: a little more cheese or greens - and the taste of the dish will change.
Soup with vermicelli
If the task is to feed not only useful, but also more or less satisfying, cook a quick soup on chicken broth with noodles or noodles and vegetables.
Ingredients:
- broth chicken - 10-12 glasses;
- onion - 1 piece;
- vermicelli - 1 glass;
- medium-sized potatoes, unfertilized - 3-4 pcs .;
- carrots - 1 piece;
- pepper peas black - 5-6 pcs .;
- cauliflower - 1/3 of a small head;
- ripe tomatoes - 2 pcs .;
- salt - 1 teaspoon;
- laurel leaf - 2 pieces;
- parsley - 1 small bunch.
Preparation
While the broth is heated, we prepare the vegetables: we will clean the onions, but we will not cut them. Carrots clean and shredded thin straws. Potatoes and tomatoes are cut into cubes. Cabbage is washed and gently cut into small cubes, trying to keep the inflorescences whole. Wash and cut the greens. In the boiling broth we lower the bulb and carrots, cook for about 7 minutes, then add the potatoes. After another 10 minutes, it's time to lay tomatoes and cabbage, add salt, pepper, and laurel. When vegetables are cooked (wait another 10 minutes), pour vermicelli and herbs. Minutes after 2 turn off the fire and let the soup brew. A chicken soup with sour cream is good.
Mushroom soup
If the soup is obtained, in your opinion, is not enough nourishing and dense, you can add mushroom dressing. Cook mushroom soup on chicken broth.
Ingredients:
- rice - 1/3 cup;
- strong chicken broth - 14-15 glasses;
- onion - 2 large pcs .;
- mushrooms (best mushrooms) - about 300 g;
- young carrots - 1 piece;
- garlic - 2 medium-sized slices;
- parsley - 1 medium bunch;
- oil without a smell sunflower refined - 30 ml;
- medium-sized potatoes - 4-5 pcs .;
- salt - ½ tbsp. spoons;
- fresh green peas - ½ cup;
- pepper freshly ground black - to taste.
Preparation
First we prepare the mushrooms. Finely chop the onions, mushrooms and we'll cut them into large pieces, fry them together with onions in a properly warmed oil. The liquid from the champignons should be completely evaporated, then the passement is ready. In the broth we put grated carrots, sliced potatoes and cook for about 8-10 minutes, after that add the washed rice, washed peas. Another minute after 7 add the mushrooms, garlic, crushed in a mortar with salt and pepper, chopped parsley. Minutes after 4 turn off the fire, and after half an hour we serve a soup with croutons or pampushkas.
