Mix flour with cocoa powder and sift several times through a sieve. Then whisk yolks with one part of sugar until a lush white mass forms. Next, beat egg whites to a thick, thick foam. Now gradually introduce the remaining sugar into proteins and continue to whisk until it completely dissolves.

Then both egg masses are mixed very gently, we put melted butter and cocoa flour. Next, we take a round baking dish, cover it with paper so that the edges of the paper hang down. Pour the dough in a uniform layer, completely cover with parchment and bake in preheated to 200 ° C oven for 45 minutes. Ready biscuit cool directly in the form, and then remove and leave to stand for 8 hours. Only after the expiration of this time, carefully unfold the cake of parchment paper.

Now we will prepare the cream for the cake "Prague". Mix the yolk in equal quantities with water, add the condensed milk and put everything in a water bath. Boil the cream to the consistency of thick sour cream, and then thoroughly cool it. Then beat a little butter and gradually introduce into it a cooled mass and cocoa. All carefully mix the mixer at the lowest speed.

Now go to the most difficult stage - the preparation of the glaze for the cake "Prague". So, sugar is mixed with water and heat the syrup to a temperature of 180 ° C. In a separate bowl, warm the molasses, pour it into the syrup. Then simmer the resulting mixture to low temperature to 150 ° C and add the fruit essence to it. After cool the syrup to 40 ° C and whisk together the mixer for 20 minutes. Then add starch syrup and cocoa powder.

GOST's recipe for making "Prague" cake is very difficult for home baking. But if you have succeeded, it only remains to properly assemble and decorate the chocolate cake "Prague".

So, cut the sponge cake into 3 equal cakes. Lower and second (middle) are abundantly lubricated with chocolate cream.
