Banitza with cottage cheese

Banitsa is a traditional Bulgarian pie, which is prepared from a dough. Usually banitza is filled with cottage cheese or its mixture with cheese, so we will try to observe all traditions and repeat the classic recipe further.

To prepare the dough, the flour must first be sifted with a baking powder, add water, melted butter and egg. Knead the steep dough, wrap it with a food film and put the rest in the refrigerator for 30 minutes.

While the dough is resting, we will prepare the filling. You can make a salted curd filling , mixing cottage cheese with cheese in equal proportions, or you can make a sweet banitza from cottage cheese with honey. For the filling it is necessary to melt the butter and mix it with ground cottage cheese, salt and liquid honey.

The rest of the dough is rolled into a thin layer, greased with butter and covered with a layer of curd. Fold the dough into a roll, and then wrap the roll with a snail around its axis. We spread the banitsa in a parchment covered and oiled form, the top is also lubricated with butter or beaten egg, and place the cake in a preheated oven for 180 ° C for 40 minutes.

Before serving, cover the hot pie with a wet towel for 10 minutes.

Banitza from lavash with cottage cheese

Cottage cheese grinded through a sieve and mixed with finely grated cheese. Add a couple of eggs in the filling, melted butter. You can additionally season with pepper and sprinkle with chopped herbs.

Fill the pie with a mixture of the remaining eggs and sour cream, after which we put the panicum in a preheated oven for 180 ° C for 30 minutes.
