Banitza with cheese

Banitza is a traditional Bulgarian puff pastry with a filling, as a rule, unsweetened, an original kind of a revolver. One of the most popular fillings for banitza is brynza and / or cottage cheese, although other options are possible (meat, vegetable or mixed, or fruit filling). Banicza is excellent for a festive menu, for a family weekend table, for dinners and breakfasts.

Cooking stuffing. Mix cottage cheese, grated cheese, sour cream and eggs. Slightly salted. The filling should not be too liquid. From the dough roll thin cakes. We make rolls with stuffing and fasten the edges. We fold each of the rolls with a spiral ("cochlea").

Lubricate the pan with oil or forgive it with oiled baking paper. We spread the banits-vertuits from above. You can lubricate the surface with creamy melted butter or egg whites. We bake banitza in the oven for about 40 minutes at a temperature of 200 ° C. We put the cooked banits in towels, folded four times, and leave for 10 minutes. We serve the dish warm or cold. You can still pour banitsa with sour cream or yogurt, or melted natural butter.

The filling for banitza can be complicated by adding chopped greens, a crushed sweet Bulgarian pepper and / or a pumpkin, grated on a small grater, mashed potatoes or steamed pumpkin.

It should be noted that sometimes in the test for banitsa add semolina in the proportion of 1 measure per 2 measures of flour.
