Wine from mountain ash

For lovers of home wines with tart notes, we recommend making a drink from mountain ash. You can use both black berries and red. The taste of wine will be different, but in any case interesting and original.

How to make wine from black chokeberry at home?

Initially, we are sorting through the berries of the black chokeberry, getting rid of doubtful specimens and leaving only ripe and high-quality ones. The necessary quantity of wine for the preparation of wine is placed in a suitable container and we knead the mass so that each berry is crushed. It is more convenient to do this with clean hands. Add to the berry mass obtained 375 g of sugar and raisins and mix well. We cover the container with the blank with a clean cloth or gauze cut and leave it under room conditions for a week, mixing the pulp daily with juice or a wooden spoon.

After a while, squeeze the pulp with a gauze cut and strain the juice, which is poured into a container for further fermentation, filling it with no more than half. We install a water trap on it or put on a medical glove with a punctured one finger.

To the pressed rowan pulp - mash, add the remaining sugar and pour in warm water, stir and place again for fermentation for a week, covering the container with a cloth. Do not forget to mix the mass daily, as at the initial stage.

After seven days, we squeeze the pulp again, the pulp is thrown away this time, and the juice is added to the main container and left for further fermentation. Now every four days it is necessary to remove the juice from the sediment, removing the foam beforehand, and again put it for fermentation. At its completion, there will be no air bubbles in the vessel with the water of the water seal or a blown and dropped glove. On average, the entire fermentation cycle can take from one to two months.

Now the young wine from the aronia must be given time to ripen. It is necessary to pour the drink on bottles and to withstand in a cool place from three months to six months.

Similarly, you can make wine from black chokeberry and apples, replacing one third of the berries with ground apple pulp. Otherwise, the process of preparing the beverage is identical to that described above.

Homemade wine from red mountain ash - a simple recipe

Red rowan for making wine is better to collect after frosts or to freeze the berries artificially, placing them for three hours in the freezer. After that, let the berries be thawed and pour them with boiling water for twenty minutes. After a while, we drain the water, and fill the mountain ash with a new portion of boiling water. After thirty minutes, we drain the water again, and let the berries pass through the meat grinder. Press off now with gauze juice, and pour the pulp heated to eighty degrees with water and leave until completely cooled. Now pour in the squeezed juice, pour half of the sugar, throw raisins or crushed unwashed grapes, mix the mass and leave it under gauze or cloth for three days, stirring daily.

After a time or when there are obvious signs of fermentation, strain the wort and squeeze it, separating the juice from the pulp. The resulting liquid base is mixed with the remainder of the sugar, we pour into the fermentation tank and install a hydraulic seal or put on a glove. We leave the workpiece until the end of the fermentation process for several weeks. After that, merge the young wine from the sludge, pour it in bottles and place it in a cool place for at least three months.
