Vareniks with cherries - recipe

Each housewife has her own recipe for cooking dumplings with cherries. And they are so diverse that it is already impossible to say which vareniki are "real", and which are just variations on a theme. Dough on water, milk and kefir, lean, yeast and lazy curd - today we will try to embrace the vast, and tell about all the types and colors of this traditional dish.

When they come up, we take out the fire, cover it with a lid and stand the vareniki a couple of more minutes. Then remove the noise and let it drain. A piece of butter will not allow the dumplings to stick together.

2/3 of the necessary flour, we sift into a bowl and, gradually adding boiling water, brew the sticky dough into vareniki . We are waiting for it to cool down a little. After that, add cocoa, sugar, salt and butter. Gradually introduce the remaining flour and knead the dough. We roll it into a bowl, cover it with a food film and leave it for an hour to "rest".

Remove the cherries from the cherries, mix with sugar. In a water bath, melt the chocolate, add the oil, mix and let the mass freeze. Thinly roll out the dough, cut out the circles with a glass. In the center of each we put a couple of cherries and a piece of chocolate mass. We make vareniki and boil them in boiling water for about 3 minutes, until ready.

Sugar and yeast are bred in warm, body temperature, milk. Add the melted butter, one egg and a pinch of salt. Mix well and add the sifted flour. Knead a smooth, elastic dough. We roll it into a bowl, place it in a deep bowl and cover it with a damp towel. We leave in a warm, quiet place for 2 hours.

Further all as with the usual vareniki. Thinly roll kruglyashi and put the filling - cherry with sugar. You can not defrost berries. We make dumplings and put them on a grease-stained grill of the steamer, leaving them room for "growth" - the yeast vareniki increase significantly in volume. Throw them in boiling sweetened water and cook for about 10 minutes. And you can lazy vareniki, like usual, freeze for future use.
