Vareniki - a nourishing and nutritious Slavic dish, most common in Ukrainian cuisine, are boiled dough products with stuffing from vegetables, cottage cheese, mushrooms, fruits and berries.
Dough for vareniki is better to make from high-grade wheat flour, it can be lean, yeast or on yogurt, sometimes with addition of sour cream. The dough is rolled into a thin layer, from which round, triangular or even square pieces are cut. They put stuffing in them, the edges of the dough tightly tear. Cook vareniki in boiling water until cooked, or cooked for a couple. Ready dumplings can be fried in creamy (including melted) oil. In any case, they are served hot with sour cream and / or butter.
The recipe for cooking tasty Ukrainian vareniki with potatoes
Ingredients:

- wheat flour high-grade - about 450 g (3 cups);
- sour cream natural (or kefir) - 3-4 st. spoons;
- food soda - 1 pinch;
- common salt - 1 pinch;
- water is cold - about 100 ml.
For filling:
- potatoes - 5-6 pcs. average value (about 500 g);
- onion - 1 pc .;
- natural butter - 80-100 g;
- ground black pepper;

Preparation
Peel the potatoes until cooked in lightly salted water. Salt the water and make a puree with the addition of butter. Slightly add, pepper and mix thoroughly.
Peeled onions shall be chopped finely and fried in a frying pan on high heat in vegetable oil (or on fat) to a beautiful brownish-golden hue and add to the mashed potatoes . All well mixed.
We pour the flour into a large bowl with a slide. Let's make a deepening and add salt, soda and sour cream. We shall grease hands with butter or fat.
Gradually adding water, knead the dough, not too steep. Carefully weave and wrap it in a food film, let's leave for 15-20 minutes, let's stand.
Now roll the dough into layers with a thickness of 1.5-2 mm. Circles are conveniently cut with a glass with a thin edge.
In the middle of each of the circles we spread an incomplete teaspoon of potato stuffing.
Carefully tightly tuck the edges of the dumpling so that when cooking it does not open.
Vareniki cook in boiling salted water, stirring gently so they do not stick to the bottom. After floating, cook for 2-3 minutes.
We extract the dumplings with a whisk and place them in a bowl with a small piece of butter. Sour cream is seasoned with pressed garlic and chopped herbs. We pour the vareniki in a bowl with this sauce and serve it to the table with a pile of aromatic spicy gorilka.
It is even easier to prepare the so-called lazy vareniki. This way of cooking dumplings will be especially appreciated by busy people and those who do not like particularly bother with long cooking.
Lazy homemade dumplings with potatoes
