Risotto with chicken and vegetables

There are many variations of cooking a popular Italian dish - risotto. To the only and irreplaceable rice base dishes are added a wide variety of products, thus receiving each time a new and unique taste.

Today we will consider how to prepare a delicious risotto with chicken and vegetables. The taste of a dish can be adjusted according to one's preferences, replacing some components with others, or adding spices to your taste.

Initially, boil the chicken in the water until ready, remove it from the broth, cool it a bit and separate it from the bones. Chop the chicken with small slices and brown them in a deep frying pan or in a saucepan with a thick bottom in vegetable oil.

Now let's take care of the vegetables. We clean carrots and onions and shred with small cubes or straws. Similarly, grind pre-peeled Bulgarian pepper and tomatoes, which previously scalded with boiling water and peeled.

In the heated oil, in which the chicken meat was fried, lay the onion. We keep it, stirring, until golden and add carrots, and after three minutes pepper. Pass the vegetables for another five minutes, and throw the tomatoes. After two minutes, we lay the fried chicken, rice croup washed up to clear water, and pour in the broth. We give the contents a good boil, sprinkle the top with finely chopped garlic and lay out on the surface sliced ​​on mugs or slices of lemon. We cover the dishes with a lid, we reduce the fire to minimal, and stew for about thirty-five minutes.

Then take out and throw out the lemon, and stir the dish. We sample the rice on readiness and if they are soft, sprinkle the dish with chopped herbs, if desired, with grated parmesan and serve to the table.

If your rice grains need more time to prepare, add a little broth and blanch the risotto for a few more minutes.

Similarly, you can prepare a risotto with chicken, vegetables and mushrooms, fry the washed mushrooms separately in a pan and add them to the dish along with the rice.
