Red Currant Wine

Raw materials for such a drink will take a lot, but the result - wine, rich in berry flavor, will be worth it. Despite the pronounced taste qualities, it is worth considering that currant wine has almost no aroma, but it easily retains its transparency, which is sometimes so difficult to achieve when making home-made wines.

Recipe for redcurrant wine

To make this wine, you do not need to memorize any exact measures of ingredients, a simple proportion of 1: 2: 3, that is, one part of the sugar should be taken two parts of the berries and three parts of the water.

Preliminary preparation of berries includes only their bulkhead and cleaning from leaves, the red currant should not be washed because the surface of berries contains a high quantity of yeast bacteria that provide fermentation.

Prepared berries are transferred to a large enough enamel, plastic or wooden packaging, which should be pre-scalded. Half of the sugar is bred in hot water, slightly cooling the syrup. Berries in a container are grinded, making sure that each of them has burst. After that, the currant is poured with syrup and left until the fermentation begins (3-4 days in heat), covered with gauze.

When the basis of the future house wine from the red currant will begin to hiss, and its smell will give off sourness, pulp is thrown on gauze and well squeezed. The resulting wine is combined with 500 grams of sugar and put the bottle under the sealed for 30-50 days (until the fermentation is complete). After 5 days, some of the wort is drained, mixed with a kilogram of sugar and poured back into the fermentation tank. After 5 days, the procedure is repeated again.

When the fermentation is completed, the young wine is carefully filtered and bottled. Each of the bottles is clogged and left in a cool for 3 months (can be more). Every 25-30 days, the wine is re-drained from the sludge in order to obtain the most pure product.

Wine from gooseberry and red currant

Before making wine from red currant with gooseberries, berries are sorted and well kneaded. The resulting mass is mixed with warm syrup, cooked from water and sugar, poured into a scalded container and left to wander in the heat for a week. Young wine is drained from the sediment and left to ripen in bottles, in a cool place, for another 3 months.

By analogy, you can prepare wine from raspberries and red currants or combine any berries you like with each other, creating unique bouquets.

Dry wine from red currant

Prepare a dry wine is simple enough. In fact, you can simply reduce the amount of sugar, but in this case, you should also observe moderation, because the wine, cooked completely without the addition of sugar, can turn out very weak and not ferment properly.

Dilute a kilogram of sugar in warm water. Fill the syrup with mashed berries and leave the drink warm for 3-4 days, stirring everything every day. Then the wine is filtered through cheesecloth, squeezing the pulp, and left to wander for another month and a half. After 10 days, some of the wine is mixed with the remaining sugar and poured back. Ready wine is drained from the sediment and left to rip for another 3 months in coolness.
