The liver is an underestimated product. How many fine dishes from it was not cooked only because many housewives simply do not know how to handle such a delicate product.
We decided to devote this article to macaroni with a liver, but not in the usual version of pasta "in the Navy" , but for more refined recipes.
Recipe for pasta with chicken liver
Ingredients:
- butter - 50 g;
- onions - 1 pc .;
- chicken liver - 400 g;
- dry white mushrooms - 30 g;
- tomato puree - 30 g;
- dry white wine - 50 ml;
- paste - 300 g;
- grated "Parmesan" - 100 g;
- salt, pepper - to taste.
Preparation
We chop onion and fry in a frying pan with butter for about 5-7 minutes, or until golden brown. Chicken liver rinse with cold water and dry with kitchen towels. Once the onion becomes golden, add the liver to it and fry it all together for 3-4 minutes.
Pre-steamed dried mushrooms are cut and added to the pan together with tomato puree (or high-quality tomato paste) and white wine. Solim and pepper all to taste.
Pasta is boiled according to the instructions on the package, we drain the water from it and mix the paste itself with the contents of the pan. Sprinkle the dish with grated "Parmesan" and serve it to the table.
Beef liver with homemade pasta
Ingredients:
For homemade pasta:
- flour - 250 g;
- egg - 1 pc. + 3 egg yolks;
- salt;
- olive oil - 2 tbsp. spoons.
For sauce with liver:
- beef liver - 250 g;
- flour - 30 g;
- olive oil - 1 tbsp. a spoon;
- onions - 1 pc .;
- forest mushrooms - 125 g;
- tomato paste - 1 tbsp. a spoon;
- milk - 300 ml;
- meat broth - 150 ml;
- basil;
- salt pepper.
Preparation
Before you cook pasta with the liver, you need to cook yourself macaroni. We sift the flour with a slide on the table, in the center of the hill we make a well, drive the egg into it and add 3 yolks, pour in the oil and salt. Beat the ingredients in the center of the well with a fork, and then knead the dough, picking up the flour from the walls of the well.
For sauce, fry sliced mushrooms and onions in vegetable oil. The liver is cleaned of ducts and films, cut into pieces and crumbled in flour. Fry the liver with onion and mushrooms for 4 minutes, then pour the contents of the frying pan with milk and broth. Add the tomato paste and cook the sauce over the fire and thicken.
Boil the pasta and mix it with the liver sauce, serve the dish on the table decorating the sliced basil.
