Fast pie with jam

Sometimes, for example, in the morning on a day off, I want to make sweet pastries for lunch, not especially for food and cooking. In such cases, you can quite delicately and without much stress bake a quick sweet pie with jam. There are a lot of such recipes, of course, except for pitted jam, we need some other products (kefir, eggs and wheat flour are usually present in the kitchen in almost any home).

Preheat the oven beforehand.

Flour sift and mix with starch, add kefir, soda, cinnamon and a little syrup from jam (3 tablespoons). Starch will give the test lightness and splendor. Brandy's will, this will improve the smell of the dough and well structure it in the baking process. Whipped eggs mixer added last. You can still then mix and dredge the dough with a mixer, it should be quite liquid.

Lubricate the mold and pour the dough so that the layer well covers the bottom. From above lay cherries or cherries from jam. In another version, it can be neat little slices of halves of apricots, peaches, plums, etc.

We melt the butter in a water bath, it should not be hot, so as not to brew eggs.

In a bowl, combine sugar, melted butter, rum, eggs, vanilla. We add a pinch of soda, which is extinguished with lemon juice. Gradually mix the flour and mix everything thoroughly. You can mix the dough with a mixer, then divide it into approximately 2 unequal parts (somewhere 2/3 and 1/3).

The smaller part is placed in the freezer compartment of the refrigerator for about an hour and a half, of course, in a closed form. The dough should harden.

When the right time is right, warm up the oven.

Lubricate the baking tray with oil and evenly distribute a large part of the dough (for this we need to roll it out), that is, we make a substrate.

Next, on top of the substrate, put a layer of frayed jam and level it with a spoon or spatula.

We extract from the refrigerator a smaller part of the dough (at this point it should harden), rub through a large grater, pouring on top of the layer of jam.

Bake this simple pie for 30-40 minutes. We serve with hot drinks, with tea, coffee, cocoa, rooibos, etc.
