How to cook mascarpone at home? So, take a clean, dry saucepan and pour cream into it. We put on a plate on a weak fire and heat up to about 75 degrees. This time we pour a little citric acid into the piallet and lightly dilute it with boiled water until it dissolves completely. Then gently pour into warmed cream and boil everything for 10 minutes, constantly interfering with the whisk. Now take a linen dish towel, add it in two layers, put it in a colander and gently pour out the creamy mass. Sometimes we mix it with a spoon in order that the whey is better and faster separated. After about an hour, you will see that the mass has acquired the consistency of a soft dough. After that, we shift the mascarpone cheese cooked at home into a glass cup, cover it with a saucer and remove it to the refrigerator.

Advice: do not pour the serum out, it produces delicious pancakes.

You can use mascarpone in different ways: for example, instead of butter, spreading it on sandwiches. You can cook on its basis a variety of desserts. And if mascarpone is properly beaten with sugar and cream, you will get an amazing thick cream for cake smearing.

Then we pour them into a saucepan, put it on the pre-burner, add a little white wine vinegar, mix whisk and keep on average fire for about 3 minutes. As soon as you see that the mass began to curl, remove the pan from the fire, completely cool it and clean it in the refrigerator for 12 hours, and preferably for the whole night. Then we take the sieve, put it in a bowl, put the gauze folded several times at the bottom of the sieve and gently pour our butter cream into it. We give the serum, how to drain. From the received quantity of ingredients you should get about 500 g of cheese.

Next, take cotton cloth or a towel, add several times and put it on the bottom of the sieve. We put the curd mixture into the fabric, tighten the edges firmly and set the oppression on top. We leave in this position for 8 hours and then we get ready, delicate and very tasty mascarpone cheese.
