Chicken carcasses thoroughly washed, divided into 4 parts, we put in a saucepan, we pour a little oil, we throw a laurel leaf, chopped onion, garlic and spices with seasonings. Then we put the dishes on a weak fire and languish for 10-15 minutes.

After that, pour in gently water, so that it practically covers the meat, and cook until ready. Next, put the chicken on a tray and leave to cool. Without wasting any time, let's make the sauce for a while: beat the mixer with homemade kefir with egg, add turmeric, cardamom, spices and mix thoroughly. Now enter the chicken broth and, stirring, bring the sauce to a boil. Separately in a frying pan fry slightly peanuts and boil in a saucepan rice. Then spread it on a tray of pita bread, put rice, meat on top, sprinkle it with plenty of peanuts, chopped parsley and pour the sauce.

Mansaf of lamb

So, we take lamb, wash it, dry it and cut it into pieces of medium size. Then we put the meat in a saucepan, fill it with cold water, add the purified whole bulbs and cook until ready, about 2.5 hours, pouring and pepper to taste.

In another saucepan pour sour cream, put on the fire and, stirring constantly, bring to a boil. After that, shift the finished meat into sour cream, dilute it with a little broth and cook for another 30 minutes.

This time we take small noodles and fry it on olive oil until golden brown. Next, throw the washed rice to the noodles and fry all together for 2 minutes, and then pour the broth and cook until ready. Now take a large tray, spread on it a thin sheet of lavash, rice, meat, pour the sauce and sprinkle with roasted almonds and fresh herbs.
