Cake "Day and Night"

For holiday occasions or just for weekends, you can make a cake. There are a lot of recipes for dessert cakes, some of them are especially popular in the post-Soviet space, such as "Day and Night" biscuit cake.

As we can guess by the name, the cake "Day and Night" should be prepared in such a way as to build a cake from the components of light tones, white or close to white cream and components of dark tones, we get them by adding cocoa powder and chocolate.

First biscuits

Separate the egg whites from the yolks. Proteins placed in the refrigerator for 20 minutes (the cold is better beat), whisk with a smaller portion of sugar to a stable foam. Yolks carefully rub with sugar and lightly beat.

Combine the whipped whites with yolks, add vanilla, lemon juice, cognac and sifted flour. You can still mix the dough lightly with a mixer. Fill the dough lubricated with butter refractory mold to 2/3 (silicone can not be lubricated), bake in the oven for 25-30 minutes. The classical round form is more preferable. We extract by turning over and more, the biscuit should "rest" for at least half an hour.

Dark chocolate biscuit is prepared the same way, only before stirring the yolks with sugar, mix it with cocoa powder (2-3 tablespoons).

Now cream

While the second biscuit is baked and "rests", we prepare the sour cream chocolate cream .

Mix the powdered sugar with cocoa powder and combine it with sour cream. Carefully rub it and - the cream is ready. By the way, you can replace sour cream with a thick unsweetened yogurt.

We build a cake or two cakes at once, for this we need a glass of chopped or ground walnuts or hazelnuts and 1 large dark chocolate bar.

Building a cake "Day and Night"

Cut the biscuits, light and dark, on each side to 2 - turned 2 light crusts and 2 chocolate. Now either we build one cake from 4 biscuits, or 2 cakes from two biscuits, alternating light and dark cakes.

Place the substrate on a dish, pour the cream and sprinkle with ground nuts, we put a different color on the top (repeat the cycle or build a second cake on a separate dish). When the cake (or cakes) are built, we pour them on top with cream and sprinkle with nuts and grated chocolate and place in a cool place for 2 hours.

You can decorate

If you want to achieve greater expressiveness and creativity of the dish, it makes sense to make a white cream from a mixture of thick yoghurt or sour cream (cream) with the addition of gelatinous solution. When this cream starts to harden a little, you can make a cake around the edges with a help of a confectionery bag or a syringe and draw out the sun, month and stars in a white cream. Be brave.

You can build cakes "Day and night" in a different way. Biscuit round cakes, dark and light, can be cut not only from the side, but also from above on 2 semicircles. Prepare the short pastry. All the ingredients are thoroughly mixed and ground. Form the substrate in the form of a cake with a thickness of about 2 cm and put it in a shallow oiled form in such a way that it just leaves the edges. Sprinkle with chopped nuts, fill the cavity with the chocolate biscuit test (see above) and bake in the oven for about 40-50 minutes. Pour cream (see above) or chocolate glaze, sprinkle with nuts and grated chocolate.
