Bulgur with vegetables

Bulgur is a cereal product made from wheat grains pretreated with boiling water, then dried and ground. Bulgur is known from ancient, still biblical times and is very popular now in the North African countries, the Balkans, the Middle East, India and Pakistan.

Using bulgur

From other cereals produced from ground wheat, bulgur is advantageously distinguished in that, due to a special initial treatment with boiling water, it retains friability during the preparation process and does not boil to a mushy state. Thus, this product perfectly replaces rice and pearl barley in different recipes, it is used not only as a side dish, but also as an ingredient of compound dishes.

The product with the highest nutritional value can be considered a large bulgur, it is a croup of brown color with a low glycemic index (from the grain, practically no outer shell is removed from the grain, which is very rich in various useful substances).

How to cook bulgur with vegetables?

Usually bulgur is prepared as follows: the croup is lightly fried in oil, and then boiled for a short time. Bulgur fine grinding is simply soaked and used for food without further digestion. We will focus on large and medium grinding. In any case, prepare separately.

The eggplants are cut into cubes and left in the cold water for 10 minutes, then the water is salted (thus removing the unpleasant toxic substances).

Bulgur is not required to be washed beforehand. In a deep frying pan or a saucepan, we warm up the oil, lightly Fry the croup for 5 minutes. The oil must be completely absorbed. Fill with water (3-5 glasses) and cook for 10-15 minutes.

In another saucepan, we cook vegetables. Fry onion in oil, lay aubergines and stew for about 20 minutes. Add the pumpkin cut into cubes and chopped sweet peppers. Stew with spices and salt until ready. Season with red hot pepper. After turning off the fire, add fresh chopped greens and garlic.

We serve vegetables with bulgur in one serving bowl. I think this dish can be served without bread and cakes.
