Soaked and washed udder in a large piece (pieces), cook with onion and spices until ready for at least 2.5 hours. Slightly cool the udder in the broth, remove and cut into slices no thicker than 1 cm.

Prepare the batter (this is a viscous dough) from a mixture of flour and eggs with the addition of milk, beer or water.

Dip slices of udder in batter and fry in a well-heated frying pan until brown-golden crust on both sides. You can serve with any garnish (beans, potatoes, rice, etc.). Necessarily we submit to the udder a spicy fragrant garlic or garlic-lemon sauce. Can be spicy tomato-garlic. For better absorption, it is good to serve table wine.

The soaked udder is boiled in broth, it is extracted and cut into large slices. Mix marinade: garlic and red pepper crushed with a small amount of salt, add the juice of lime, let the marinade brew for 40 minutes and filter (this is necessary so that then garlic is not burnt). Marinu sliced ​​udder for at least 2 hours, or better 12 - the smell will change dramatically. We extract the pieces prepared in this way, we dry them with a napkin and lightly fry in a frying pan on both sides. At the end of cooking, we flambé, that is, fill with tequila and, without removing it from the fire, we set fire to it. We serve with stewed beans, potatoes, rice, polenta. Separately serve hot sauce. Tequila, mescal, pulque, cachasha, grape wine are good for this dish.
