Heat the frying pan on the fire, pour in the flour and fry it until golden brown. Then leave the frying pan to one side and allow the ingredient to cool. Pour the broth into the flour with a thin trickle and stir well so that there are no lumps. Cut finely onions, carrots, parsley root and pass on the heated oil in a frying pan. Add the tomato paste, bring to a boil. After this, pour broth, diluted with flour, mix and once again bring to a boil with the lid closed. On a small fire cook for about 10 minutes. At the end of the preparation of the red sauce add salt, pepper, sugar. Finished the sauce to drain, from the vegetable mass with a blender to make a mash. Mix everything and bring it to a boil again. The sauce is ready, now it needs to be cooled and can be served to the table.

Red meat sauce

If you want to serve red meat sauce, cook it on a meat broth and add 1-2 tablespoons of port and the same butter to the pan at the end of the cooking.

Red sauce for fish
