Peresmachi - recipe

Peremyachi is a traditional Tatar dish, which is a cake with tucked edges that covers the filling. In Uzbekistan, the peremyachi are called - Byelyashs . The most common filling in the dashes is minced meat, but sometimes they are baked with curd or potato stuffing. Usually yeast dough is used for cooking, but fresh fruit, which is introduced on a sour milk product (kefir or yogurt), is also suitable.

To make a dough for a chamomile, on a large cutting board we fill a hill of flour, inside of which we make a deep hole. In the groove, gradually pour in milk, salt and sprinkle yeast, mix everything. In a warm place we put the dough obtained, where it should stand and rise (the volume increases by 2 times).

In parallel, you can do the preparation of stuffing. In meat and onions, passed through a meat grinder, add salt, throw a pinch of pepper. If you like garlic, we recommend adding a few crushed denticles to make the transplants particularly fragrant.

We pour the board for flour cutting, put the dough on the board. Take ΒΌ of the dough, roll out a smooth thick sausage from it, cut off small pieces. Each of the pieces is rolled with a rolling pin, which is also sprinkled with flour, so that during the rolling of the dough, it does not stick to the flat cakes. Received thin cakes (diameter 10 - 12 cm) also do not forget to sprinkle with flour. After processing the whole test for flat cakes, we proceed to the modeling of the Tatar rumor. In the center of the cake we place a tablespoon with the top of the stuffing, bend the edges of the dough, lightly collecting them, leaving a small hole.

On a thick-walled frying pan, we heat the vegetable oil, put the peremyachi in the oil hole down. Then turn the patty over. The readiness of the chamois is easy to determine by the golden color of the dough, and whether the mince is ready is understandable by the broth which, when fried, is visible in the hole. Peremyachi with meat are ready, when the broth will become from the murky transparent and light.
